Pumpkin Spice Smoothie

Fall is here and nothing says, “Thanksgiving is coming” quite like pumpkin flavored drinks and desserts.

Ingredients:

  • 1/2 cup pumpkin puree
  • 1 cup coconut water
  • 2 pitted dates (pitted)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1 pinch ground clove (this is 1/16 teaspoon)
  • 1 pinch ground nutmeg
  • 1 cup ice cubes
  • coconut whipped cream (optional)


Equipment: blender


Instructions:

  1. Place the pumpkin puree, coconut water, dates, vanilla extract, cinnamon, ginger, clove, nutmeg and ice cubes into a blender and blend on high until smooth.
  2. Top with a dollop of whipped coconut cream.
  3. Drink. 
  4. Feel warm and cozy inside.
