Spinach Crepes

Crepes are so versatile, they can be a meal on their own or part of a larger menu. They can hold countless different fillings, or be eating by themselves. They can even be sweet, savory, or something in between. At our house we usually enjoy these spinach crepes as a main dish. I like filling them with cottage cheese, avocado, beans and roasted red peppers while my fiancé prefers to have them breakfast-style with eggs, bacon, avocado and cheese. You could also have these as a fun side dish to main meal and fill them with roasted veggies and feta.

I prefer to have lots of small crepes so I make these with an 8” non-stick skillet. If you want to have larger crepes just use a larger pan, but you will end up with less crepes. I find that most people will eat 3-4 small crepes as an entree, or 1-2 as an appetizer.

I put dried oregano into the batter because the flavor compliments many of the fillings we use in crepes (cottage cheese, beans, avocado slices, eggs, ham, bacon, mushrooms, etc). You can leave out the oregano or replace it with your favorite spice, but if you do decide to use it you should avoid putting any cilantro, dill or tarragon flavored things in the crepes as the flavors are not complimentary.

Cooking time for these is about 2 minutes per crepe, so if you are making 8 small crepes it will take you about 16 minutes.

Ingredients:

  • 4 ounces frozen spinach (by weight - about 1 cup)
  • 5 ounces unsweetened organic soy milk
  • 2 large organic eggs
  • 2 ounces flour (about 1/2 cup)
  • 1/2 teaspoon coarse salt (e.g. kosher salt)
  • 1/2 teaspoon dried oregano
  • crepe filling of your choice (optional)


Equipment: scale (recommended but not required), blender, skillet


Instructions:

  1. Place spinach, soy milk, eggs, butter, flour, oregano and salt into a blender and puree until smooth.
  2. Let the batter sit for at least 30 minutes so the flour can swell. You can let it sit over night, just make sure to put it into the fridge. If you let it sit for longer you may need to add some liquid to loosen the better up a bit. You want it fairly loose, so just add a teaspoon of water at a time to reach the desired consistency.
  3. When ready to cook, heat a skillet over medium heat. Then grab the handle of your skillet in one hand and your batter in the other hand. While pouring the batter into the pan you want to simultaneously rock the pan around so the batter covers the bottom of the pan in a thin layer. Pour any excess batter back into the blender and set the pan on the hob. 
  4. Your first crepe is always a test crepe to make sure the batter is the right thickness and that the pan is the right temperature. If you had to pour excess batter back into the pan, just use a spatula to cut off any irregularity that makes the crepe not circular. 
  5. Cook for 1 minute on the first side (also know as the public side) then use your fingertips to grab the crepe and flip it over. You will notice that as it cooks on the first side the edges start to curl up, that is what you want to grab. Using a spatula is acceptable but not really recommended as it often rips the crepe or makes it much more complicated. Just use your fingertips!
  6. Cook for 30-60 seconds on the second side (the non-public side) then grab it with your fingertips and stack on a plate. 
  7. Continue this way until all of the batter is used.
  8. Enjoy as-is or stuff them with your favorite filling.
